Go to Users and find the user whose data you need to recover. To simplify the selection process, use filters (by Org. Units or Groups) or search by name.
Once the user(s) is found, click on the Outlook icon next to their name. You will be redirected to the page with their Outlook backup.
To recover a specific email, tick the box next to it and click Restore.
